Baked Cauliflower with Mustard Sauce

Ingredients:
Makes: 6-8 servings

  • 1 cauliflower head
  • 1/4 cup light olive oil mayonnaise
  • 1/4 sweet onion, minced
  • 1 tbs yellow mustard
  • 1/4 cup cheddar cheese, shredded
  • 1 tbs panko crumbs
  • black pepper to taste

 

Directions:
Preheat oven 400F.

Remove leaves and wash fresh cauliflower. Place cauliflower head on a microwave safe plate with a little water.

Microwave on High for 13-18 minutes or until tender. Remove from microwave. Set aside. (be careful, the steam will be hot!).

Combine mayonnaise, onion, black pepper, and mustard in a small bowl. Spread over top and sides of cooked cauliflower. Sprinkle with cheese. Top with panko crumbs.

Bake cauliflower for 5 minutes just to heat topping and melt cheese.
