Makes: 4-6 servings
• 1lb flank steak or sirloin steak (cut flank in half lengthwise (along the grain); then cut into thin strips (across the grain)
• 5 cups broccoli florets
• 2 tablespoon olive oil
• 1 medium onion, chopped
• 1 tablespoon granulated garlic
• 1 tablespoon corn starch
• 1 cup low sodium beef stock
• 2 tablespoon low sodium soy sauce
• 1 tablespoon brown sugar
• 2 cups jasmine rice (prepared according to directions)
sea salt and black pepper
Season both sides of flank steak with granulated garlic, sea salt and pepper
Heat 1 tablespoon of olive oil in large skillet over medium-heat. Add steak and stir fry beef until beef reaches desired wellness. Remove & keep warm. Add remaining olive oil, onions, and broccoli. Stir-fry vegetables for about 4-5 minutes. Add beef.
Combine beef stock, cornstarch, brown sugar, and soy sauce until smooth. Add to skillet. Cook and stir for an additional 2 minutes. Depending upon thickness, you may need to add additional stock or water. Serve over jasmine rice.
