Broccoli & Corn Stir Fry

Makes: 4-6 servings

• 1lb chicken breast (use meat tenderizer to thin breast before sauteing)
• 2 cups broccoli florets
• 2 cups fresh corn
• 1/2 medium sweet onion, sliced thin
• 3 cloves garlic, minced
• 2 tbs Hoisin sauce
• 2 tbs low sodium soy sauce
• 2 tbs sesame oil
• 1 tbs sesame seeds

Heat a large skillet over medium-high heat. Add olive oil & saute chicken breast until cooked. Remove from skillet to cool. Slice thin & set aside.

To make sauce: mix Hoisin sauce, soy sauce, & rice vinegar in same bowl. Set aside.

In same skillet, add onions and garlic. Cook for 1-2 minutes or until slightly tender. Add corn and broccoli. Saute until broccoli is fork tender but still firm. Add sauce and mix well. Cook for 2-3 minutes. Garnish with sesame seeds. Enjoy
