Chicken Kabobs

Makes: 6-8 servings

  • 2 boneless, skinless chicken breast, cubed 1-inch pieces
  • 1 medium sweet onion, cut into wedges
  • 1 green bell pepper, cut into wedges
  • 1 yellow pepper, cut into wedges
  • 1 red pepper, cut into wedges
  • 2 tablespoons coconut oil
  • 1 tablespoon sweet basil
  • 1 tablespoon parsley
  • 2 teaspoons granulated garlic
  • salt & pepper

Combine granulated garlic, salt, pepper in a small bowl & combine sweet basil and parsley in another small bowl.

Drizzle chicken and veggies with coconut oil. Season chicken and veggies with herbs & seasonings. Thread the chicken, green bell pepper, onion, and red bell pepper pieces onto skewers alternately.

Lightly oil stove top grill pan. Cook kabobs over medium-high heat, turning once or twice, about 8 to 10 minutes or until no longer pink in center.
