Chicken Marinara

Makes: 8-10 servings

• 8-10 boneless, skinless chicken thighs (remove any remaining fat)
• 2 tbsp olive oil
• 1 medium onion, chopped
• 2 cloves garlic, chopped
• 1 cup sliced mushrooms (optional)
• 1 tsp granulated garlic
• 1-2 tsp Italian herb seasoning blend
• 1/2 tsp salt & pepper
• 1 jar (24-26oz) marinara sauce (low sodium)


Season chicken breast with salt, pepper, granulated garlic, & Italian herb seasoning blend. In a large nonstick skillet coated add olive oil, cook chicken over medium heat for 4-6 minutes on each side; remove and keep warm.

In the same skillet, saute the onion, garlic, & mushrooms until slightly tender. Stir in marinara sauce. Add chicken; cover and simmer for 10 minutes or until heated through. Serve with zucchini noodles, whole wheat pasta, or pair with sauteed kale & brown rice. Enjoy!
