Sauteed Kale with Garlic & Coconut Oil
Ingredients:
Makes: 4-6 servings
- 1lb organic kale, large stems removed & leaves chopped
- 2 tablespoons coconut oil
- 1 small sweet onion, chopped
- 3 garlic cloves, chopped
- 1/2 cup reduced sodium chicken stock
- 1/2 teaspoon red pepper flakes
- sea salt & pepper
Directions:
Heat coconut oil in a large saucepan over medium heat. Add onion and garlic. Cook until soft. Add chicken stock and kale. Toss to combine well. Cover and cook for 5-8 minutes. Remove cover, add red pepper flakes and continue cooking, stirring often. You want to saute your kale until it is tender and most of the liquid is gone. Season with a pinch of salt and black pepper.
