This simple, moist side dish is both delicious and nutritious. Sweet potatoes are rich in complex carbohydrates and fiber. The cool thing with this recipe is you can add whatever vegetables you’d like & make it your own dish. Try adding red potatoes & butternut squash…the family loves it!!!
Makes: 6-8 servings
- 4 medium sweet potatoes, peeled, cut into 1 1/2-inch-thick cubes
- 3 small red potatoes, cut into 1 1/2-inch-thick cubes
- 2 tablespoons olive oil
- 1 tablespoon thyme
- 1 tablespoon parsley
- 1/2 teaspoon sea salt
- 1 teaspoon black pepper or red pepper flakes
Preheat oven to 425°F. In large mixing bowl, combine all ingredients and mix well. Arrange potato pieces in a single layer on coated (cooking spray) baking sheet or in 13×9-inch baking dish. Place in oven and roast until tender and slightly browned, about 40 minutes. Enjoy!
