Turkey Stuffed Peppers
Ingredients: Makes 14 servings
7 large bell peppers, cut in half, seeded, & steeped in boiled water for 10 minutes.
2.5 lbs ground turkey
1 lb crawfish tails (when possible, buy Louisiana crawfish)
1 lb shrimp, peeled & deveined
1 medium onion, chopped (I use Vidalia sweet onions)
3-4 garlic cloves, chopped
1/2 green bell pepper chopped
2 tbsp extra virgin olive oil
2-3 tbsp thyme
2 tbsp parsley
1/2 - 1 cup sharp cheddar, shredded
1/2 - 1 cup panko crumbs
1 tsp cayenne or black pepper
salt to taste
Directions:
Preheat oven to 350°F.
In a large nonstick skillet over medium heat, add olive oil to heat slightly.
Add onion, bell pepper, garlic. Saute for 5 minutes.
Add ground turkey. Season with salt, black pepper, cayenne pepper, & 1 tbsp thyme.
Cook until ground turkey is cooked. Drain excess fat/water.
Add crawfish tails. Mix well. Saute for 5 minutes.
Add peeled & deveined shrimp, thyme and parsley. Mix well. Saute until shrimp are cooked.
Add cheese, mixing in 1/4 cup of cheese at a time. The cheese will help to bind the turkey and panko crumbs together.
Once cheese is melted and well mixed, add panko crumbs. Mix well. Optional to add more panko crumbs based on consistency preferences.
Stuff each pepper with turkey mixture and place in 9 x 13 baking dish.
Sprinkle top of each pepper with additional panko crumbs.
Add a little water to bottom of baking dish. The steam will assist the cooking process.
Bake for 30-45 minutes. Enjoy!
