Roasted Carrots with Thyme and Parsley

Makes: 6 servings

• 1 16oz baby carrots
• 2 tbsp olive oil
• 1 tsp thyme
• 1/2 tsp oregano
• 2 tbsp fresh parsley
• sea salt & black pepper to taste


Preheat oven to 400F. Spray baking pan(s) with non-stick cooking spray.

Place carrots in large mixing bowl. Toss with olive oil, salt, pepper, thyme, and oregano. Pour carrots in single layer on baking pan. Cover with foil and place in the oven for 30 minutes. Check tenderness of carrots. Roasting times may vary.

Add parsley and gently stir. Enjoy!
