We love fish! We especially love tilapia! It’s a great source of protein, omega-3’s, & is naturally low in fat. This colorful & flavorful recipe goes well for breakfast, lunch, or dinner! Give it a try & let us know how much you love the taste & versatility of this singe recipe! Enjoy!
Makes: 4 servings
• 4 4oz tilapia fillets
• 1 small sweet onion, thinly sliced
• 2 tablespoons extra virgin olive oil
• 2 mini yellow peppers, cut thin strips
• 2 mini orange peppers, cut thin strips
• 2 teaspoons parsley
• 1 pinch of cayenne pepper
salt and pepper
In a medium skillet, heat 1 tablespoon olive oil on low, cover & saute onion & peppers about 5 minutes. Set aside
Season tilapia with salt, black, & cayenne pepper. In large skillet, heat olive oil and saute tilapia over medium heat, approximately 3-4 minutes per side.
When serving, top sauteed onion & pepper mix over tilapia filets. Enjoy with roasted sweet potatoes & steamed broccoli! Makes one amazing dinner! Enjoy!
