Spinach Parmesan Zucchini Noddles

Makes: 4 servings

• 3 medium zucchini, spiralized
• 3 cups fresh spinach
• 1-2 tbsp olive oil or coconut oil
• 3 cloves garlic, minced
• 1/4c Parmesan cheese
• 1-2 tbs parsley
• sea salt & black pepper to taste

Heat a large skillet over medium-high heat. Add olive oil and garlic, cook for 1-2 minutes. Add in the spinach and zucchini noodles. Gently toss and cook until spinach leaves are wilted & zucchini is slightly tender.  Stir in 1/4 cup of the Parmesan cheese and toss well. Season with salt and freshly ground black pepper, to taste. Enjoy!
